Alternatively, though I hate to suggest this in an ESP subreddit, you might like the look of this Pi Pico solution designed and built in the UK by Pimoroni. For about $40 or 37€+VAT you get a board with a Pico W (i.e. with wifi) and 3 wired sensors. The software is on github, and written in MicroPython. The board goes into deep sleep, has an RTC to wakeup with, and can run off 3 AA batteries.
Have you seen b-parasite? There is a sample that uses zigbee, and somewhere in the issues someone had used an NRF528x chip that had an attachable antennae, which may help your BLE connection issues.
