Thanks! Yes, it's possible to run this locally! The code is available on my GitHub here, feel to play around with it. You can use npm build to compile the code into a build folder, serve locally with serve, and then access it at localhost:5000.
You should look into https://element.io/ (open source slack), they recently added MathJax support. We have been using an in-house hosted instance for a while now and are quite happy with it.
