If you know your way around Docker or can set up a php -environment you can host Kanka yourself.
People have built pretty incredible things with TiddlyWiki. It's a neat piece of software that can be molded into many things. TiddlyWiki is very quick to set up but the tinkering rabbit hole goes deeeep.
If all that is too much hassle, Obsidian or Logseq might work for you.
