I'm stuck in the place where I'm confusing "learning how to kitchen" instead of "learning how to cook better meals" and I hate it
You could try something like this. It's a simulation of a real world project with some hands on tasks to work on. So there are tutorial-like elements to it, but really it focuses on giving you just enough information to be able to work on it yourself - and will expose you to lots of different concepts.

Anyone want to know what it's like to work on a real project?
Each app (see this diagram) is actually running in a Docker container when you run it locally. So the front end for the website is a container that is running the VueJS standard dev server. The backend is a Django server running on a separate container. In theory you could run them both on the same container, or run them locally together, you just need to use different ports.

How do I find front end open source project to work on?
Not exactly MEVN stack, but could try working with this: https://github.com/Code-Over-Time/varcade_games - Uses Vuejs, has a nodejs game server running Express. Though data is in Redis/MySQL.

Two dev jobs down...and I need to go back to the books.
If you are set on doing some open source work and practicing this stuff, I've got a project that I think will really help in your case. https://www.codeovertime.com/ - it basically gives you the opportunity to work on a real world project, without the real world pressure. You can join me over at the newly launched r/codeovertime or just jump straight into the code on github.

Who else here has programming as hobby and what do you suggest I learn next after python, vim, nand2tetris course etc?
If you'd like to try working on a more complex, modern, real world project you could try this: https://github.com/Code-Over-Time/varcade_games

Where can I learn how to plan out large projects?
You can try an open source project to get a sense of where you're at. Link this one, docs are here.
