UDM Pro + OpenVPN site-to-site + split-vpn working together?
I have successfully configured this script to connect site-to-site with my family home. There is only OpenWRT router so I can use OpenVPN only.

How do you set up an OpenVPN/Wireguard VPN on a UDM Pro?
Alternatively, there is another script another user made here that I found. It claims to allow you to have a custom OpenVPN config while keeping it integrated via the Unifi interface. Not sure if that means you can debug it through the interface, but you might want to check that out too if you prefer not to use the command line to manage the interface. I can't vouch for it as I haven't tested it myself.
