Do I need zsys or are there alternatives?
If you want a ZFS root, look at https://zfsbootmenu.org/. If you want it for Ubuntu specifically, consider Sithuk's script which automates it at https://github.com/Sithuk/ubuntu-server-zfsbootmenu .

Announcing ZFSBootMenu 2.1.0
I ended up trying this and it worked almost flawlessly (issue with auto-selecting apt mirrors, but easily fixed).

What are some alternatives?
dracut-crypt-ssh - dracut initramfs module to start dropbear sshd during boot to unlock the root filesystem with the (cryptsetup) LUKS passphrase remotely
dracut-sshd - Provide SSH access to initramfs early user space on Fedora and other systems that use Dracut
zfs-keyvault - systemd service to securely load ZFS encryption keys from Azure Key Vault
zfsbootmenu - ZFS Bootloader for root-on-ZFS systems with support for snapshots and native full disk encryption
archiso-zfs - Easily load ZFS kernel module on any Archiso.
sanoid - These are policy-driven snapshot management and replication tools which use OpenZFS for underlying next-gen storage. (Btrfs support plans are shelved unless and until btrfs becomes reliable.)
httm - Interactive, file-level Time Machine-like tool for ZFS/btrfs/nilfs2 (and even actual Time Machine backups!)
