If you want a ZFS root, look at https://zfsbootmenu.org/. If you want it for Ubuntu specifically, consider Sithuk's script which automates it at https://github.com/Sithuk/ubuntu-server-zfsbootmenu .

Looks like someone (u/Sithuk) already has messed around with setting that up with a script. No idea how well it works, but I'd definitely use it as a reference: https://github.com/Sithuk/ubuntu-server-zfsbootmenu

I ended up trying this and it worked almost flawlessly (issue with auto-selecting apt mirrors, but easily fixed).

https://github.com/Sithuk/ubuntu-server-zfsbootmenu this project is probably the closest I have seen to the idea install.
