Do I need zsys or are there alternatives?
If you want a ZFS root, look at https://zfsbootmenu.org/. If you want it for Ubuntu specifically, consider Sithuk's script which automates it at https://github.com/Sithuk/ubuntu-server-zfsbootmenu .

Accidentally made a stripped system disk, need to make it mirror instead

Future of ZFS on Ubuntu?
Looks like someone (u/Sithuk) already has messed around with setting that up with a script. No idea how well it works, but I'd definitely use it as a reference: https://github.com/Sithuk/ubuntu-server-zfsbootmenu

Ubuntu 23.04 Desktop's New Installer Set To Ship Without OpenZFS Install Support
You can install following instructions at https://openzfs.github.io/openzfs-docs/Getting%20Started/Debian/Debian%20Bullseye%20Root%20on%20ZFS.html which I've automated with https://github.com/HankB/Linux_ZFS_Root/tree/master/Debian. For scripting, you should also look at https://github.com/zbm-dev/zfsbootmenu. I'd probably go that way if I were starting from scratch.

I want real world examples of what do you actually use Bash for.
Bash is (IMO) well suited to tasks that execute other commands and perhaps tie them together via output or exit status. One of my contributions is https://github.com/HankB/Linux_ZFS_Root/blob/70032aade50ec7542f1ad954c0ecaf63a5cbc354/Debian/install_Debian_to_ZFS_root.sh which I use to install Debian with root on ZFS.

Disks Labled by ZFS - How to Save and Use again?
If the target is a full disk install, it performs the action on the whole disk. If installing to specified partitions, it wipes those partitions. You can see it at https://github.com/HankB/Linux_ZFS_Root/blob/master/Debian/install_Debian_to_ZFS_root.sh

Tried installing debian with root on zfs but rEFInd boot menu is blank
I've tested my script using VirtualBox and with UEFI boot.
- Benefit to using LUKS vs. ZFS native encryption?
What are some alternatives?
dracut-crypt-ssh - dracut initramfs module to start dropbear sshd during boot to unlock the root filesystem with the (cryptsetup) LUKS passphrase remotely
zfsbootmenu - ZFS Bootloader for root-on-ZFS systems with support for snapshots and native full disk encryption
dracut-sshd - Provide SSH access to initramfs early user space on Fedora and other systems that use Dracut
archiso-zfs - Easily load ZFS kernel module on any Archiso.
zfs-keyvault - systemd service to securely load ZFS encryption keys from Azure Key Vault
git-publish - Prepare and store patch revisions as git tags
sanoid - These are policy-driven snapshot management and replication tools which use OpenZFS for underlying next-gen storage. (Btrfs support plans are shelved unless and until btrfs becomes reliable.)
httm - Interactive, file-level Time Machine-like tool for ZFS/btrfs/nilfs2 (and even actual Time Machine backups!)
