Why does official Symfony Docker image use Caddy and not Nginx?
First, there is no "official" Symfony Docker image. You're probably referring to https://github.com/dunglas/symfony-docker, which - although being maintained by a core team member - is not an official image from the Symfony organization.

Any recommendations for dockerizing an old symfony 3 app?
Just thought I'd ask here for recommendations for any helpful base images or existing projects for reference. I'm not really a symfony/php person, so any advice other would be helpful too. I'm definitely looking at this symfony-docker project, but I might just end up using the official php 7.2 base image.

Create executable file from Docker image
Here is the idea: let's say I have Symfony application using this image. But other people, non-tech ones, interested in this app would have to install Docker too even though they only want to run it and see it in browser.

As others mentionned, I can only suggest you to go with Symfony, it meets all your requirements. If you are looking for a docker config out of the box, this one is my favorite (done by one of main Symfony's maintainers) - https://github.com/dunglas/symfony-docker Very simple to install, use and deploy later.

composer require orm fails when using official symfony docker installation.

Getting started with mercure
I used combination nginx + caddy but I consider to drop nginx and leave Caddy because it's a reliable web server for production use. Also I found good github repo with docker config which makes it much easier to setup https://github.com/dunglas/symfony-docker

Introducing MixerAPI, a project for streamlining RESTful API development
Those are some of the things I sought to solve with MixerAPI. This is another project which saw the same shortcomings as I did, https://www.aphiria.com/, I just didn't think it made sense to build a ground-up framework to solve the problem. Use something existing, build on top, and don't mess with existing workflows in the framework. Just augment them is how I feel about things at least.

Exotic/unknown frameworks?
Author of Aphiria here. The base controller just provides a few properties and helper methods. If that's too much coupling for you, it supports POPOs as controllers too.

Is any one actually using PHP generators in their projects?
I use them as a micro-optimization in my router. Whenever I find a potential matching route, I yield return it and check it against constraints, eg does the HTTP verb match. This way, I don't have to grab all potential route matches prior to checking constraints.
