Technically, are there any difference between tokens that are used as currencies like (LINK, DIA, SUSHI, GRT..)?
Yeah. Just take a look at the contracts/ directory on Github for any of these projects. For example contracts/ in graphprotocol/contracts. There are lots of other .sol files, each containing at least one contract. Token is just one of them.
