How difficult is steno to learn?
If it uses cherry mx switches and you have access to a 3D printer, you can try these out: https://github.com/cemrajc/stenotoppers. (The software is set up to work on a standard qwerty board, but the stagger will make chording difficult).

What types of switches are compatible with the yask steno keyboard
I don't know enough about keyboards. Are kailh choc low profile switches compatible with the board? Or do i need to go with another low profile switch. How do i do this. Hopefully someone else has done this project which is why I'm asking here. I'm not sure how to do this. I would like low profile as that is more comfortable for me. I'd love some suggestions for switches and keycaps if possible https://github.com/ttempe/YASK
