Proper way to delete Facebook and Messenger
I would like to delete my Facebook and Messenger account, and delete as much data as possible. I already ran redact.dev, so all the posts and comments are removed. I tried to run Shoot the messenger for my messenger chats, but it gives a notification for iPhone users for every unsent message, so I stopped it.

Deleting Messenger and Facebook fully
Can't help you with the server thing because there is a good chance that Facebook will keep a copy of thr conversation anyway but you can at least make them disappear for your chat partners copy by "unsending" them. (Link to Facebook's help page) Unfortunately you have to do this one by one which can be a long process. There is a script on GitHub to automate it but I don't know if it's still working.

Will my Instagram direct messages still be readable once my account is deleted?
I only know of an addon on GitHub for Facebook which might work on Instagram as well because they have very similar chat systems but I can't promise it. I actually deleted everything by hand and yes, it was a long and tedious process.

Is there a way to mass unsend messages on messenger?
https://github.com/theahura/shoot-the-messenger This claims to do exactly what you're looking for. I haven't test it myself though. I just remembered it because the creator posted it on Reddit a while ago.
