Safest way to tell your Seed over a phone call?
With your freshly installed, OFFLINE computer, you can use this tool https://github.com/iancoleman/shamir39 to split the seed into multiple parts and send the out put to different people. Depend on the parameters you set, you only needs a portion of the original output to reconstruct the seed.

Shamir secret outside of trezor T?
That has info about how to do it but other than iancoleman I'm not aware of other implementations. It should be used offline obviously.

If you want something specific done with them when you die, you have to arrange it beforehand like a will. The easiest way is Shamir's secret sharing. I wrote a program called horcrux for that and whenever someone asks a related question I link to it again. It seems to come up a lot.
