LinageOS kernel for other device
If you are just after a kernel, what is wrong with Samsung's kernel? They are good at providing the kernel sources for all their devices at https://opensource.samsung.com/ - just enter your device model number.

can i overclock my phone?
samsung should have supplied source code for your kernel, so start by downloading it at https://opensource.samsung.com

JanOS – Turn your phone into an IoT board
Maybe it's different in the US, but in Europe, all Samsung phones can have their bootloader unlocked via a simple two-step procedure, so end users can flash whatever they like as the OS. They also have all their Linux kernel source code, along with any changes they've made to other open source components, available at https://opensource.samsung.com.
I've repurposed an old Galaxy S7 to run as a remote development server, via this method. I have it set up so it's just like logging into any other Linux box.

Good 64 bit samsung phones?
A more official way would be to use https://opensource.samsung.com , input the model, click on Announcements, if files or folders related to 64 bit are missing (e.g. lib64), then the OS is 32 bit.

I want to ask about privacy concerning android phones. I am mostly a Samsung user but I think about using android debloater to make the phone more secure. I have now a Samsung s10 and there I have information. I need advice how to proceed with phone security.
I recently have looked into flashing my Samsung with a custom linux, look at opensource.samsung.com where u can actually download the phones system/kernal but most importantly it has the firmware needed.

Any OS I could install to a Samsung Galaxy A12?
If somebody already ported something like LineageOS to your device you could look for the firmware in where the port was posted on, say, XDA Developers. That's how I found vendor files (or basically what is essentially firmware) for my A21s. That being said, even if you find the vendor files porting something like PostmarketOS to a new platform requires skill and some very specific knowledge about Android phones. I tried to compile Lineage myself using the vendor files and the Samsung kernel (which you can find on opensource.samsung.com for your model), but failed miserably to the point where I had to reflash my bootloader just to make things work again. If you do take up on that task, I wish you luck in your endeavors.

Accubattery
Most manufactures do limit the state of charge, with my Pixel 3XL at 95% and LG V40 around 94% (don't quote me on that, I don't remember the exact value). For Samsung, you can check out some of the low level definition files for the S10 and S20. Better to look at the S10 file since it's not in decimal and has comments. Mostly identical for the S21.
