You're better off with a tool that was made for Pop! https://github.com/guisalmon/pocse. I've used that for years without issue.

How to change the select text color
The fix already posted might be all you need. If not, you'll need to make a custom css file, or use a tool that will make one for you. You will need to have the "user themes" GNOME extension installed and enabled. Then just select the custom theme in GNOME Tweaks.
