List of Rails Templates?
I used to maintain https://github.com/nickjj/orats since 2014 but I consider the above repo a successor to that. It's not easy to end up with a production ready solution when you try to cobble together a bunch of independent little templates but it is possible when you have a single baseline app which you could then add your opinionated gems to afterwards.

List of Rails Templates?
I made a gem that shows an interactive wizard to pick different gems/configs https://github.com/arielj/rails-new-app (I havent' tried it with Rails 7 yet though)
What are some alternatives?

Rails Composer - Rails Composer. The Rails generator on steroids for starter apps.
Raygun - Rails application generator that builds applications with the common customization stuff already done.
Hobo - The web app builder for Rails (moved from tablatom/hobo)
Onotole - Rails project generator, which will cut all starting routine in maximum flexible mode
Bootstrappers - Bootstrappers is the base Rails application using Bootstrap template and other goodies.
Ultra Light Wizard - No time to manage a wizard state machine, session variables, or complicated controllers? Use ultra light wizard!! A RESTful session-less validation-friendly simple multi-step form approach in Rails.
docker-rails-example - A production ready example Rails app that's using Docker and Docker Compose.
