I feel like Moria is a nice intro that gets into the fundamentals. Very close to Rogue but with just a bit more fun stuff without getting complicated.

Robert Alan Koeneke has passed away. He was the the original creator of "Moria", the very first directly rogue-inspired game
I recommend checking out UMoria for those interested in the game. It's a port of the original game which fixes bugs and inconsistencies, corrects typos, and adds a few quality of life improvements.
