I actually have a setup a cool gamepad layout using steam so controller is not an issue, I already play with a controller on my PC. The issue is streaming quality. I've tried with Moonlight and Steam Link (using NVIDIA SHIELD GameStream like this)

Best local PC streaming app for Portal?
Moonlight can also stream your local games over Internet so you dont need to be on the same Wifi network, but that requires an additional software on your PC. Best Way to Stream Games from PC to Laptop
Not particularly, especially since you likely already have NVIDIA GeForce Experience installed. You can follow the setup guide here. It may look daunting, but it's really just a variety of alternatives if the automatic configuration doesn't work or you want a specific configuration.

Managed to get TOTK working on the PSVITA through Moonlight with relatively low input lag!

Is there a way to tell Windows to put my monitors to sleep while I play on TV connected to PC?
DisplayMagician is made for simracers, and is a fork of Helios Display Management that has some extra features. Once setup, you can have a shortcut on your desktop to easily switch between monitor layouts. On my setup, I hit an icon and it will disable my desktop monitors and switch over to my simrig monitor which sounds similar to your needs. The advantage of this software is it is automating the standard windows monitor enable/disable/positioning so it is very quick and more reliable than other methods. If you want to take it a step further you can script it, for example mine will flick to a certain layout when opening a specific program or game.

Looking for some advice re. switching between display profiles;
Hey gang, I currently own four monitors connected to my PC's GTX1070; an Acer X34 as my primary on my desk and 3 AOC C27G2s set up on my racing simulator. Ideally, I'd love to be ableto run the triples at 5850x1080@165hz, with the X34 at 3440x1440@95hz. Currently, I can do this on Windows with Nvidia Surround and Helios Display Management, where the latter allows me to switch between two display profiles (one for the triples & one for the X34 on its own). I'd love to be able to purge Windows completely, preferably by switching to Manjaro KDE - which of course uses the Plasma DE. I'm not married to that though, and any Linux-solution that could achieve this setup would be gladly accepted :) TL;DR: Does anyone know a means of setting up a "Surround + Accessory" display profile in Linux? Or alternatively, setting up two separate profiles that can be switched between relatively easily? Any ideas/advice to get me pointed in the right direction here would be sincerely appreciated!

Do you have to use Nvidia Surround for triple monitor use in ATS/ETS ? Any way around it?
I've been using https://github.com/falahati/HeliosDisplayManagement to quickly change between surround and not-surround.

Is there any way to turn on/off a display under "Set Up Multiple Displays" in the Nvidia Control Panel via hotkey? Autohotkey? API? Another program?
I use Helios Display Management for quick monitor arrangement changes.

Same PC for sim rig and home use
Set up the triples using nvidia surround, win-P should allow you to quickly switch between triples and desk monitor. This is how I did it when I had triples & 1x desk, unfortunately I’m not sure how it would handle 2x desk. You might be worth looking at https://github.com/falahati/HeliosDisplayManagement
