If you want to run multiple Minecraft servers in docker then you have a few options like bungee cord, or waterfall, but I like itzg/mc-router which works kind of like nginx where it gets port 25565 then routes to different backends based on the subdomain

I'm considering building a minecraft server for me and my friend, is this video any good? Do you guys have any other advice?
Love itzg's minecraft server image, especially the auto-pause feature when noone is online (after a customizable timeout). I also run mc-router to not have to bother with SRV records.

How to hibernate server
Other panels may also have the functionality but you'd have to research those. If you didn't want to use a panel, there's this wrapper you could try: https://github.com/gekware/minecraft-server-hibernation. Unsure how robust it is.
