I'm surprised nobody has mentioned Lando. It uses docker/docker compose under the hood, but adds a further layer of abstraction to make it even easier. Comes with base recipes out of the box for Drupal/WordPress/etc.

Local Drupal Development for Mac

Local setup for headless D9?
I think I might just need to get more familiar with docker-compose. Since posting though, I did come across https://github.com/mogtofu33/contenta-ddev and https://medium.com/bb-tutorials-and-thoughts/vue-js-local-development-with-docker-compose-275304534f7c, so I can probably hack something together from those.
