Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.

emacs distributions without evil?
You might look at crafted emacs and my own lambda-emacs (not sure if either of these are properly classified as "distros" though). Both default to vanilla Emacs bindings. The repo for lambda-emacs also has a bunch of links to some other great vanilla configs like Prelude, etc.

About to declare Emacs bankruptcy. Any advice for cool or new packages, defaults, or ideas I should use before I start building my init.el? Also interested in guides to using evil.
I am a professor in the humanities (philosophy) and I maintain a framework for Emacs (I don’t know if it rises to the level of “distro”) that is conducive to humanities work, including writing, notes, citations, a good ui, and basic programming. 7 - Meow: Meow is great. I switched from evil a few months ago and am pretty happy with it. I also dropped general.el for bind-key.el, which is included with use-package (which I see you are using anyway). You can look at my setup of meow here and a more generic setup of keybindings here. I haven't had any trouble with using this instead of general.

Tmux sessions-like package for Emacs?
tabspaces, the package that leverage vanilla emacs as much as possible by using tab-bar-mode and project.el added session/tabspace restoration somewhat recently and it works pretty well.

However, it seemed that the buffer save/restore was misbehaving. I created 2 PRs (one for save, one for restore) -- would you be able to have a look?

Questions About Emacs Workflow
I tend to use a single emacs instance and single frame with multiple tabs as workspaces using tabspaces (I'm the maintainer). That lets you group buffers by tab (which means by window configuration), and there is an option to connect tabs with specific "projects", as understood by the built-in project.el. I tend to have a tab for my agenda, another for email, and then tabs for whatever projects I'm working on. I've been doing this for a couple years and it works pretty well for me but YMMV.
