Are kiwix and .zim files safe?
Every file you download from library.kiwix.org has a public SHA256 key so you can check it has not been tampered with. The source code is also entirely open so you can rummage through it and see if there's anything wrong with it.

This being said, there's a lone (and awesome!) volunteer working on that one so feel free to open tickets on https://github.com/kiwix/apple/issues (or support.kiwix.org if you just feel like he needs more chocolates)

No idea but the PIA VPN app for swift is open source. At the very least you can dig through the code here and figure something out

Why Librem Tunnel is Leaving iOS – Purism
Note that the underlying application for Librem Tunnel on iOS ( https://github.com/pia-foss/vpn-ios ) is still on the Apple store and can still be used with the Librem One services ... one simply needs to perform the setup yourself (much like one needs to do for Librem One Mail on Apple).
