I know Java well enough to solve LC problems, experience with JUnit and JavaFX. Can you recommend something that would help me learn about Spring Boot in building "full stack web apps with APIs".
Finally, once you finish most of these tutorials, I recommend you taking a look at gothinkster/realworld, specifically taking a look at React + Redux for the frontend and Spring Boot + Spring Data JPA.

React I Love You, but You're Bringing Me Down
Yeah unfortunately the author hasn't kept making these articles.
You can see the React+Redux implementation here:

How to connect backend and frontend
Hello. I'm a complete newbie and I stumbled upon this "gothinkster realworld" thing. Apparently I can take any frontend, I chose (this one) and backend, (this one ) and they should work with each other, I can get both projects running individually but I can't understand exactly how I'm supposed to connect them.

Are there real-world apps that are built with react where I could see the codebase? As a beginner, I would love to understand how far away my knowledge is from building something real.
However although their React+Redux example is perhaps the most popular one, it's not currently maintained. Instead, this maintained fork is recommended on their list. It's not in TypeScript, which today's projects should normally use, but I guess it's OK for beginner to study

React I Love You, but You're Bringing Me Down
> React takes us forward in the sense that most of us don't want to go back to direct DOM manipulation
There was recently a demo of what a Todo MVC app might look like if written in vanilla JS with today's apis. It looks fairly decent; I could see myself going back to something like that:

Ask HN: What happened to vanilla HTML/CSS/JS development?
>> Does not trigger when modified from the same page
I'm thinking that's the purpose of https://github.com/1Marc/todomvc-vanillajs-2022/blob/main/js... - without dispatching that custom save event, there wouldn't be a way to react at any other locations on the same page to the store updating.
