Which MATLAB course to take for undecided
Paying for code doesn't make it any less prone to bugs. If Python can be trusted to handle observations from the James Webb Space Telescope, it can probably be trusted for other, more terrestrial applications. In any case, since it is open-source, you can always inspect the source code yourself to verify what it is doing.

Which MATLAB course to take for undecided
There are a lot of python packages for engineering and scientific applications (as well as other applications in general, and, thanks to the inherently collaborative nature of free software, they are only growing in quantity and quality. Many MATLAB toolboxes already have Python equivalents.
