Why is JavaFX development still a dog's breakfast?
I agree. You have to download JavaFX yourself and a 11+ JDK. If it helps, I have a Kotlin repo which sets up a JavaFX app, using gradle. Here is the gradle file from the repo. https://github.com/SergeMerzliakov/javafx-app-1/blob/master/build.gradle

What is your take on the current state of JavaFX as a GUI library?
I built an open source UI wrapper for jpackage called Installmation - https://github.com/SergeMerzliakov/installmation - which builds installers. It’s pretty basic but it works. I do not yet have a build for apple silicon however.
