Best 4k streaming device
Biggest issue with AppleTV is no USB. I use an Xbox Wireless Adapter for 8 Xbox controllers. Can't do that on AppleTV, and it doesn't handle 4 bluetooth controllers at once all that well. If you don't care about those ksshes, yes the Apple TV will work great. Personally I use a Mac Mini M2 Pro because I want 4k/120Hz on my primary screen. Previously used Nvidia Shield Pro at 4k/60Hz, which also worked great. On a second TV, which is usually used by 1-2 people at once, use an AppleTV. Works great. Also you need to use the [::ffff:x.x.x] or Zerotier workaround on tvOS if the host is outside your network.

What is the best cloud gaming solution for NVIDIA now?
Next, the App Store has a limitation, so you need to use a workaround to add your streaming PC.

Nvidia Shield TV will lose GameStream for PC streaming in a coming update
This is unlikely to fix it. I would suggest opening a ticket on GitHub. They are pretty quick with their response and would help you diagnose it properly. But I can tell you that my 5.1 surround worked perfectly on my end; it wasn't stereo whatsoever. But this might be conformation bias on my end because rarely do I use my speakers, as I only play at night after coming back from work and 90% of my play is with my Airpods Pro plugged in.
