Check out Installr. You can deploy a fresh OS and any necessary PKGs. You can do it remotely or with a USB drive. I use Installr to deploy Outset. Outset holds the scripts I use to adjust various preferences. Works great.

Wiping and Restoring to Big Sur T2 Mac
Installr works really well and will knock a few steps off your process. You just go into recovery then terminal, run a command and 20 min later have a vanilla Mac. No messing with FileVault and because its triggered from terminal you dont need to enable external booting.

you could look at setting up something with installr. I use it on a regular basis for my support teams to do reinstalls/upgrades.
