I type "ifuse /mnt/iphone" and there is a DCIM/###APPLE dir with the images and videos where I use "cp -a" to copy the files to my computer

That directory doesn't work with Möbius Sync however, it gives an error when you try to set it as the local path for sync. Also, I can't figure out how to access that from Linux via ifuse: https://github.com/libimobiledevice/ifuse/issues/58

Replace disk as a precaution?
Preventing the error condition from arising deprives you of the opportunity to exercise and test the process that is supposed to handle it gracefully. Of course, you can always test with fail_make_request, md FAULTY, unreliablefs, etc., or QEMU 6.1, but real hardware can sometimes fail in more interesting ways.
