I type "ifuse /mnt/iphone" and there is a DCIM/###APPLE dir with the images and videos where I use "cp -a" to copy the files to my computer

That directory doesn't work with Möbius Sync however, it gives an error when you try to set it as the local path for sync. Also, I can't figure out how to access that from Linux via ifuse: https://github.com/libimobiledevice/ifuse/issues/58

Download older versions of any iOS app with Brook
ideviceinstaller is used here, and macOS has brew that can be installed directly. If you don't want to compile for windows, here has compiled it, use this here.

If your ipa is signed or you have Appsync Unified installed, you can use ideviceinstaller from libimobiledevice. On Ubuntu you can install it with apt: sudo apt install ideviceinstaller
