Is there a way of syncing Outlook's calendar to CalyxOS's default calendar?
Check out the ICSx⁵ app from the DAVx⁵ people, it syncs ICS files and is available on fdroid.

ProtonOS Android, a privacy-first AOSP with all Proton services integrated
Pretty much the only choice we have is to flash a custom rom without Google Mobile Services and GApps, while hosting a private Nextcloud instance and use DAVx⁵ + ICSx⁵ for CalDAV (Calendar), CardDAV (Tasks) and WebDAV (Cloud) based private mobile services. This sets the technical bar pretty high.

401 Unauthorised when trying to sync a Webcal through ICSx5
I also posted about this in ICSx5's Github Q&A here.

My opinion on /e/ OS on Fairphone 4
eCloud: I haven't tried the eCloud, as I don't want a 3rd party to host my files; whether it's Google, Dropbox, OneDrive, or eCloud, I don't want any 3rd party to have my files. Therefore I'm hosting my own Nextcloud server, and because the eCloud is a fork of Nextcloud, Nextcloud integrates seemingly into my phone. The calendars and contacts are automatically integrated with DAVx5, and the subscriptions with ICSx5, and this is all possible in the default Calendar, and Contacts app, so I'm really happy with that.

Is there any way to automatically duplicate gmail calendar events to my EteSync calendar?
Although this doesn't use EteSync, you could sync your work Google calendar using the ICSX5 App: https://github.com/bitfireAT/icsx5
