Out of house
I use the VPN on my FRITZ!Box. Since I don’t have no much problems, I only use the HomeKit HMI. For monitoring the Homebridge I use my IOs widget from scriptable. Which I can use at home or when I am connected thru VPN. https://github.com/lwitzani/homebridgeStatusWidget

Plugin to check the NodeJS version
There’s a HomeBridge scriptable widget that will at least let you monitor various statuses (and sends notifications) including node.js version.

No. I use this scriptable widget on all my devices and have it load the website when I tap it.

How Often Should I Update Corresponding Components?
Not sure if you’re aware of this already or not, but I use this handy little dashboard, which also has the ability to notify you when updates are available. I like it cause I can checkout s change log whenever it pops up, and if I choose not to update or forget about it, there’s always that little red dot reminding me that some updates need to be applied.

There's a plugin that adds a sensor that tells you if there are plugin updates available.

I might give this a go. I have the homebridge plugin update check https://github.com/Sunoo/homebridge-plugin-update-check which recommended to run it as a child bridge, so you have to turn on notifications for the plugin.
