Blackout blinds?
Look into Somfy drapes and blinds, but with a Bond bridge. The Somfy myLink and Tahoma bridges suck by comparison. The Bond bridge has a plugin and this plugin works well too: https://www.npmjs.com/package/homebridge-blinds

Loving the Lutron Serena shades with HomeAssistant
I also played around with the Bond plug-in before landing on this other blinds plug-in, which worked great too, adding support for setPosition with my shades.

Has anyone in the US gotten the Somfy Tahoma homebridge plugin to work?
I'd ultimately recommend a Bond bridge instead, the regular version is only $99, supports Somfy and so much more. It also has a homebridge plugin, although I'm using it with homebridge-blinds right now.

Bond Bridge Plug in with Somfy Shades
Bond Bridge Pro has range of 3,500 square feet, versus 2,500 square feet for the standard model, but also, it specifically features Somfy Slider Control that no other hub from any manufacturer includes. What this means is I can use the Bond app to choose a specific percentage of open/closed, as opposed to just the open, close, or "my" (i.e. favorite) presets, which I found rather limiting. This helps for scheduling precise positions throughout the day or even just for manual granular control. That being said, similar functionality is also available with the standard Bond hub, so long as you use Homebridge and the aforementioned homebridge-blinds plugin, since the developer added it to fill the gap. But then that percentage "SetPosition" only works via HomeKit, whereas with the Bond Pro I can use the Bond app, as well as other integrations like Home Assistant and other voice assistants like Alexa. While I was experimenting I started this chat with the plugin developer, the discussion may be of interest to you: https://github.com/dxdc/homebridge-blinds/issues/68

Questions about Somfy integration
If you only want to spend $99 for the regular Bond hub and are also running Homebridge you can replicate similar “SetPosition” control for blinds using this plug-in: https://github.com/dxdc/homebridge-blinds

Ismartgate with gate strike and keypad
The only thing I could think of is using something like a Shelly Plus 1 in HomeKit (firmware/Homebridge paired to a strike of the appropriate voltage.

How to track sun angle for automations to control Eve motionblinds?
This or this.
-
Outdoor LED strips
You could use a generic LED strip and a Shelly RGBW2 flashed with shelly-homekit or use it without flashing through homebridge-shelly
-
DIN rail relais
They’re not HomeKit compatible by default (nothing DIN rail mounted will be) but could potentially be supported using Homebridge depending on which relay you go with.

Is there any sort of in-wall switch (like this Meross one) available in the US?

2 gang dimmer (UK)
Yup! This would be my recommendation. A Shelly 2.5 if you want to add two independent circuits to HomeKit. Not native, but works fantastic! The Shelly can be added to HomeKit via a Homebridge plugin or (my personal favorite) Mongoose HomeKit firmware. Plus you can still use your normal-looking wall switches!

New construction home. Designing backyard. Any HomeKit-compatible controllers to consider?
Either a Shelly 1, 1PM, or 2.5 depending on if you just want on/off, power monitoring, or need a dual channel option. Can be integrated to HomeKit via Homebridge or my favorite, Mongoose Shelly HomeKit.

Towel Rail Panel Cover
And then as CautiousAd said either Mongoose HomeKit Firmware (my personal favorite) or Shelly Homebridge will get you up and running 👍🏼

How to keep my dumb switches and expose them to HomeKit
I can't recommend Shelly enough, the Shelly 1L is a no-neutral relay that can go in behind your switches and tends to be pretty solid. You can control them through an app, flash with shelly-homekit, or use homebridge-shelly to control them.
