Should we abandon YAML and JSON for complex AWS Services configurations by using AWS CDK TypeScript, JavaScript or Python instead?
Yes indeed, yaml and json are not suited for describing infrastructure. Off the self programming languages provide conditionals, loops and so on. I wrote an alternative to CDK/terraform called www.grucloud.com, check it out.

I've used https://www.cloudcraft.co/ but I am not sure it's going to have everything you are looking for. Visualization/mapping tool?
It can be slightly pricey, but I like Cloudcraft a lot. They were just recently acquired by Datadog so I don't know if that's going to change things much, but it's pretty slick. You just need to create an IAM role in your AWS account(s) and it picks up every piece of infrastructure and maps it out. There's a bit of filtering and massaging to do but it's a pretty effective tool.
