Possible options for large number of user accounts
In terms of running your own server with Activesync; obviously there is Microsoft Exchange, possibly Open-Xchange too (it isn't free), but you could deploy your own Zimbra server (a few options, they have open source but you need a bolt on for ActiveSync) or there is Group Office, which is open source and supports ActiveSync: https://www.group-office.com/

Is there any Private+FOSS hoster who can replace Microsoft 365?
Take a look at Group Office. It has file management and sharing, email (with S/MIME support), contacts, tasks, and notes. Additionally, there are seamless integrations with either collabora and libre office online. It is open source and you can either self host or host with the developer. It is pretty well documented too.

An open-source alternative to QuickBooks
There's also Plain Text Accounting[1]. The biggest problem of all open source solutions, accountants' experience aside, is the lack of banking and taxes integration, especially outside of US, e.g. for Asian, South American, or African businesses. The most promising FOSS solution for SME I was able to find is Akaunting[2][3].

Yes. Exactly that. The only thing I could find until now is https://github.com/akaunting/akaunting. But I’m not sure if this is all included in the open source version
