Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

Voting from hardware wallet?
You can use the cli to vote via hardware wallet. https://github.com/gitmachtl/scripts/blob/master/SPO_Pledge_Catalyst_Registration.md#how-to-vote-with-funds-also-pledge-on-hardware-wallets-new https://github.com/vacuumlabs/cardano-hw-cli#catalyst-voting-registrationp

Thoughts on this for NFTs as of the current state of Cardano.
I used these scripts you seem to know more on how it works. I just followed to instructions how to mint restricted tokens.

So I think I FINALLY have a node running, now to figure out CLI. Can anyone point me in the right direction?

Is it possible to have stakepool pledge controlled by a Ledger/Trezor?
I haven't tried funding my pledge from a ledger, but yes it's possible. Check out https://github.com/gitmachtl/scripts/tree/master/cardano/mainnet#working-with-hardware-wallets-as-an-spo

Multi-signature addresses on Cardano
After witnessing the transaction and submitting it, the 4.8 tADA were transferred. As soon as Vacuum Labs will update the Ledger firmware to support Alonzo era transactions (this will happen soon: https://github.com/vacuumlabs/cardano-hw-cli/issues/114), the “transaction build” command should also work, as in the guide.

Using Cardano-CLI with Deadalus + Hardware Wallet
BTW, I looked through the source code of cardano-hw-cli and think that it wouldn't be too much work to get it to sign transactions that include minting. Just commenting out these lines and maybe altering a couple of others might even be sufficient, because the tool's witness function doesn't actually need to parse minting information when it signs the transaction (since the signature is applied to the unparsed CBOR for the whole transaction body, not to the parsed representation).

Pledge Security
I'm not certain, but I believe you are correct. I asked some similar questions in https://github.com/vacuumlabs/cardano-hw-cli/issues/59. My understanding is that following the steps in that Medium post allow you to Pledge from the hw wallet and if your cold machine/producer were completely compromised, your pledge would not be at risk (and if you used the same address for the rewards, neither would they - although if you're a joint owner I don't think that's possible, so you'd need to trust the owner of the reward wallet to distribute the rewards).
