So i have a bunch of images in same size . How can i create a sprite sheet of all the images into one single image ?
You can use LibGDX's Texture Packer tool as one option to generate sprite atlases: https://github.com/crashinvaders/gdx-texture-packer-gui . You may have to put in some additional work here to suit your specific needs.

Sprite class: I want to keep all object's sprites in one file
Another way you could go about this is by keeping the separate files in a folder, and then use an external tool such as GDX Texture Packer GUI to pack the sprites into an atlas, and then import the exported atlas in Godot using a custom EditorImportPlugin such as Rubonnek's GDX Texture Packer Atlas importer.
