Flop rock: inside the underground floppy disk music scene
FYI (or others using retro equipment with floppy disks) there's a cheap floppy disk emulator called Gotek that can be connected in place of your 3.5" drive and has an USB connector where you can put a thumb drive with disk images.
For that device there's an Open Source firmware project called FlashFloppy [0] that enhances its features. And I've found today that there's an Open Hardware reimplementation [1] of the Gotek hardware that's compatible with the FlashFloppy Firmware.

What's the most unpleasant software that you've had to package up and how did you work around it?
If you're not too particular, you can pick up a GoTek unit for $30 and use it as-is, with no firmware or hardware mods.

Gotek Floppy Emulator on Windows 95
I thought so, too, when I got mine. Some people do the modifications before selling them on ebay or wherever and so they are effectively plug and play, but I discovered that unless that's the case I needed to do some stuff to make it work. As the other user suggested, you want to get FlashFloppy. The installation process was a little involved to be honest, but not impossible with the step by step instructions I had found. Unfortunately I can't easily link you anything because there are different versions of Flashfloppy and different versions of the Gotek and different steps depending on what you have. I'd start by looking up flashfloppy and looking through the various instructions. Here is a place to start: https://github.com/keirf/FlashFloppy/wiki/Firmware-Programming

I have a A1000. My Kickstart disk doesn't work. Should I just go buy new/old stock?
Specifically, one that supports Flashfloppy.

There's rgb2hdmi, Amiga OCS/ECS specific, and OSSC, for any VGA/RGB/Component source.

Pi Pico rgb2hdmi
I use a version of this for my 2000s (https://github.com/c0pperdragon/Amiga-Digital-Video) but on my 500s PiStorm and an external RGB SCART to HDMI box that you can buy cheap AF on eBay.

Raspberry Pi-based mods for retro consoles/computers
Computers: 1. Commodore 64 Pi1541 - emulates 1541 floppy drive for Commodore 64. Video review 2. Amiga RGB2HDMI - convert Amiga's RGB video signal into friendly HDMI output. Video review 3. Amiga Pistorm - emulates faster version of Motorola 68000 CPU. Theoretically, can be used in any machine that uses 68k chip. But I hear mostly about Amiga Pistorm implementation. Basically, Pi Zero emulates faster CPU, video modes, acts as HDD storage, HDMI output etc. Pistorm does what popular Amiga accelerator boards do for hundreds of space bucks. Video review

Commodore Amiga 500
If you want to go the HDMI route, there is this device. It sits in one of the chip sockets and uses a PiZero to add a HDMI socket.

Best scandoubler for A500.
Would HDMI or DVI be acceptable? Maybe this would work for you there are a few people on eBay selling them, the hardest part is getting a raspberry pi

Forget the OSSC on my A500. This RGB to HDMI adapter is something else!!
You can build the adapter board yourselfhttps://github.com/c0pperdragon/Amiga-Digital-Video

VGA/DVI/HDMI output : best modern alternative for the return of my A1200 : Indivision AGA? Raspberry Pi zero DIY? ...
For me at least - for ease of use and display quality, I have found the OSSC very good and works well my my original Xbox with component cables, however I am looking to try out the Raspberry Pi option with my A500 at some stage, especially since it can be powered and mounted internally within the Amiga which seems pretty cool.
What are some alternatives?
OpenFlops - Open-Hardware Floppy Drive Simulator
RGBtoHDMI - Bare-metal Raspberry Pi project that provides pixel-perfect sampling of Retro Computer RGB/YUV video and conversion to HDMI
greaseweazle - Tools for accessing a floppy drive at the raw flux level
Amiga-VideoSlot-RGBtoHDMI - Add pixel-perfect HDMI output to big box Amiga machines with video slots. This project builds on c0pperdragon's Amiga-Digital-Video project, adapted for use in big box Amiga video slots.
ArduinoFloppyDiskReader - DrawBridge aka Arduino Amiga Floppy Disk Reader/Writer - Hardware and software interface for accessing Amiga disks (read/write ADF and SCP) on non-Amiga hardware
