Trying to get `fixed-pitch` face to inherit from the `default` face
Maybe install mixed-pitch-mode instead of built-in variable-pitch-mode and add faces to preserve fonts to mixed-pitch-fixed-pitch-faces. It fixes this specific issue.

Emacs Text Alignment
As others have said, the problem is that you are using variable-pitch fonts for the table. You can use mixed-pitch-mode (https://gitlab.com/jabranham/mixed-pitch) to combine fixed- and variable-pitch. It works great with Org mode.
