Is elixir a viable option for developing AR?
https://github.com/cocoa-xu/evision exists. This is bindings to OpenCV, which is really the thing you want for doing AR.

Aspiration for evision (Aspiration for 2022)
I also have an aspiration to apply the Pelemay technology to evision. That is, I'm going to implement optimization invocations of evision.

Aspiration for evision (Aspiration for 2022)
I developed NxEvision, a bridge between Nx and evision. I hope it will be a bridge between machine learning and computer vision in Elixir.
What are some alternatives?
When comparing evision and nx_evision you can also consider the following projects:
nx - Multi-dimensional arrays (tensors) and numerical definitions for Elixir
opencv_contrib - Repository for OpenCV's extra modules
pelemay - Pelemay is a native compiler for Elixir, which generates SIMD instructions. It has a plan to generate for GPU code.
OpenCV - Open Source Computer Vision Library
OpenFrameworks - openFrameworks is a community-developed cross platform toolkit for creative coding in C++.
openpose - OpenPose: Real-time multi-person keypoint detection library for body, face, hands, and foot estimation
