How to convert an online ebook to pdf?
Seems like his book is being posted with maybe https://github.com/futurepress/epub.js/ which somehow 404s every link I could find to the xhtml or ofp files he might actually want. Might be a different method for getting these?

Show HN: Lota – An online ePub reader with VS Code style
That looks quite a bit like the ePub (and PDF and ...) reader [1] I made for Nextcloud, many years ago. I have not maintained it for a few years due to a lack of time and interest (I made it so my daughter could read on the school-issued iPad on which she was not allowed to install apps, it lacked a good reader) so it doesn't work on current versions but it could be made to run with relative ease. It uses the Futurepress epub.js library to render ePub documents, it would not surprise me to see this product using that as well.
As to the question of needing an internet connection for reading a book the answer is that epub.js - or rather the browser engine in which it is executed - can lead external files so it can be used without an internet connection. I suspect this product can not be used in that was since it has 'cloud storage' as a 'premium' feature. Running locally would undermine the value of this 'premium' feature.

Building a Reader. Do I need to use ePub?
In my quest to search for a building an online reader, I came across epubjs. Should I be using ePub format or should I be using HTML, Plain text to build the reader.

Apps > Files > Reader (ebook reader). Works well enough in my limited testing.

Ask HN: What are your “scratch own itch” projects?
Simple things like:
Spodcast, a Spofify->RSS bridge [1], made it because I listen to netcasts while working outside out of network reach (forest and field work).
Reader, a native-look epub/pdf/cb[rz] reader for Nextcloud [2], made it when my daughter was issued an iPad at school on which she was not allowed to install any "apps" while I thought the thing was tailor-made for reading books. The iPad was returned years ago but I recently updated Reader to make it run again.
...and a host of small tools which I make just when I need them, dumping them to GH for all to peruse, e.g.:
ZMapi, a Zoneminder CLI tool [3], made it when I installed a video surveillance system in the new barn which uses Chinese cameras which I do not want to be able to access the 'net directly.
bs, a Bookstack API CLI tool [4], made it when I needed to upload a large number of conference videos to a Bookstack site.
...etc
I don't have much time for these side things since I'm mostly busy on and around the farm but every now and then the weather is a good excuse to keep me inside...

I gave Reader a good kick, shook out the debris from the tree and made it look a bit more like a "modern" (ha!) Nextcloud app and with that it should work again on current Nextcloud. Find it here:
