Can I split config into multiple files
Yes, using an intermediate app that “compiles” the files into one. There’s https://github.com/okraits/j4-make-config and also a fork, https://github.com/D-Vaillant/i3configs.

How do you guys handle using one set of dotfiles or general configuration on different resolutions / screen sizes
I forked https://github.com/D-Vaillant/i3configs from ‘j4-make-config’ for dealing with i3 configurations, but I generally use ‘yadm’ now because I don’t feel like messing around with this project and the i3 configuration is less of an issue compared to other dotfiles.
