Trying to get files from disk image
Someone AppleCommander contributors are writing a non-java command-line tool written in Go but I don’t think it supports export yet https://github.com/zellyn/diskii (I hope it does support more features soon, I’d rather use this than a java or windows GUI app. Are there any Go coders who want to lend them a hand?)

Or, use AppleWorks 3.0 and you can use CiderPress or AppleCommander to export the documents, including formatting, to HTML or .doc file. Easiest way with those is to use ADTPro to transfer disk images over to a modern computer.

how can I paste a windows text file into an apple II emulator to make a disk image?
AppleCommander also has the ability to import text and convert it to tokenized AppleSoft. Really handy if you want to automate building file images.

There’s a java tool called AppleCommander https://applecommander.github.io/ which might have the features you need, releases are at https://github.com/AppleCommander/AppleCommander/releases/
