I have a server with a root install of ZFS. It is working normally. However, I realized that directories like /etc/samba, /etc/letsencrypt and some others were not specified during my initial setup using this script https://github.com/64kramsystem/zfs-installer

I'm not sure that the Proxmox ZFS settings are the problem here. FreeBSD VM performance with ZFS root was considerably better than Ubuntu's. And I just tried Ubuntu again using this 3rd party zfs-installer https://github.com/64kramsystem/zfs-installer I set up ZFS with the defaults, and Ubuntu VM with ZFS root now runs fine on Proxmox. I am thinking the problem is with the default ZFS settings on the Ubuntu desktop image.
