Haven't played DayZ in quite some time but this tool made the trick

I was able to run DayZ quite some time ago on Linux without Steam Beta. I don't know where you saw that you needed Steam Beta but that's definitely not the case ahah. I'm afraid I cannot help you with your Steam Beta issue, but as for DayZ I used this tool to join modded servers. If you don't like CLI tools there is also this one which uses a GUI but I have never tested it.

There are a few launcher alternatives that performs the mod configurations (like this or this for example), I tried the DTZUI, a little bit of work because you need to mark each Mod to download individually on Steam Community (DTZUI gives you the list of mods needed by the server and the link to download each one).

If you plan to play on modded servers, you should try this launcher or this one, they're both great

Hm, really? I use sunshine/moonlight on arch, with steam link as the client device, and it works fine on anything I threw at it. Well, with one exception: You need to either install one version down of sunshine, or use this build: https://github.com/HomerSp/Sunshine/tree/fix-rumble-hang
