Networking lab for learning using containers?
I also saw there's this Github project from Nokia - https://github.com/srl-labs/containerlab - which seems like a framework for setting up complex container-based network labs. However, I'm not sure if this is overkill for my use-case - also, it seems like it's geared towards network gurus, not those who are just looking to learn the basics of simple network protocols.

Career paths into Cloud related roles?
So, if you want to break into industry, my recommendation is still, look into Kubernetes eco-system. For network labs look into container-based projects like https://containerlab.dev/. They're still new, probably you could manage to contribute to them.

Best virtual router/switch to lab vxlan?
You could also try netlab from ipsace: https://github.com/ipspace/netlab . You can construct an entire network infrastructure from a yaml file and there are examples for building an evpn/vxlan infra.
