A most "manual" mahjong game
i think the most manual mahjong i can find is https://autotable.riichi.moe/ but it doesn't have cpu. its meant to play with human to simulate an auto table

Decent Mahjong game to demonstrate game to beginners?
I will throw in another vote for Autotable, if you don't mind zipping around the table to play each hand. It's all manual, so if you don't plan on having other people around the table, you'll need to handle it all yourself. This could be good if you plan on trying to teach your audience how to play.

Washizu Mahjong Discord
I'm starting a small Discord server for people who want to play Washizu Mahjong. We will be playing on a modified version of the Autotable website or on Tabletop Simulator (probably the former since it's free and less hardware-demanding) Either way, you'll probably need a microphone.
