Self hosting for the first time.
On the server itself, I've installed UFW (Software firewall for linux). After installing it, I added a rule to only accept traffic on port 22 (ssh port) from local machines (192.168.1.0/24). Then I added a rule to only accept traffic on port 443 from cloudflare servers. I then generated myself some ssl certs for a new domain that I purchased. I then setup nginx to listen on port 443 for the domain that I bought using the certificates.

Is cloudflare-ufw (https://github.com/Paul-Reed/cloudflare-ufw) compatible when using Cloudflare Tunnels?

Instead you should restrict access to your server to their IPs yourself, perhaps using something like cloudflare-ufw.

Help with V2ray settings
You can't choose. The configurations are decided after you set up v2ray on your server. I am not familiar with the script you are using but usually it should print out the configurations after installation. Check if there is any command of x-ui that can print out the configs. This is the script I've been using you can try it if yours doesn't work.

No shadow socks does not work well now. Try v2ray. There are scripts which can automatically set up it, like this

Also, one other preferred thing, UUID instead of different ports. This is possible using this script, however, it is v2ray only and not stable enough for me. My plan is to use only 443 port.
