Does anyone know where i can found those icons/images from Windows 11?
You can find them as a font preinstalled with Windows 11 (I suggest installing UWP Character Map to copy the icons from there) called Segoe Fluent Icons, you can also find another font for fluent icons here: https://github.com/microsoft/fluentui-system-icons

I designed YouTube for Windows 11. Can someone help me understand if it would be possible to have both back and menu button in the title bar? Just like the web version, the side menu is hidden to make room for the video.
The icon font is Segoe Fluent icons which comes bundled with Windows 11, you can view and copy the icons in it using UWP Character Map. There are also more fluent icons in Fluent System Icons which you can find here: https://github.com/microsoft/fluentui-system-icons

But there are numerous free Icons, also beside UTF-8 - e.g. I would prefer something like this: https://icon-sets.iconify.design/fluent/calendar-today-28-regular/ (MIT-Licence https://github.com/microsoft/fluentui-system-icons/blob/master/LICENSE) - you can use e.g. the svg.
