Postgres / MySQL / SQL Server?
I maintain an open source .NET CMS and it uses Entity Framework for 90% of the application, but the remaining 10% uses Dapper with SQL Server's JSON functionality. I received a pull request for potential support for MySQL, but it does not address that JSON functionality issue. I think it may be worth it to spend some time to support both SQL Server and MySQL or Postgres.

Create table dynamically based on different json with ef core
However, SQL Server has recently greatly improved their support for JSON columns though they still have a ways to go in my opinion. The trade off here is that to get the full power of it, you cannot use EF Core. You have to write the raw SQL queries and use something like Dapper. https://github.com/RaythaHQ/raytha is an example of a project does this.

New developer, need help debugging large .NET applications at mg job.
You may want to check out https://github.com/raythahq/raytha. It's a starter template for .NET applications that uses established patterns that are popular in large scale applications. It might be a good idea to practice on it.
What are some alternatives?
moq - The most popular and friendly mocking framework for .NET
CleanArchitecture - Clean Architecture Solution Template for ASP.NET Core
FluentMediator - :twisted_rightwards_arrows: FluentMediator is an unobtrusive library that allows developers to build custom pipelines for Commands, Queries and Events.
m-r - Simple CQRS example
Entity Framework - EF Core is a modern object-database mapper for .NET. It supports LINQ queries, change tracking, updates, and schema migrations.
fast-architecture - Fast Architecture
NSubstituteVsMoq - Moq vs NSubstitute comparison
Smartstore - A modular, scalable and ultra-fast open-source all-in-one eCommerce platform built on ASP.NET Core 7
NSubstitute - A friendly substitute for .NET mocking libraries.
Fluent Assertions - A very extensive set of extension methods that allow you to more naturally specify the expected outcome of a TDD or BDD-style unit tests. Targets .NET Framework 4.7, as well as .NET Core 2.1, .NET Core 3.0, .NET 6, .NET Standard 2.0 and 2.1. Supports the unit test frameworks MSTest2, NUnit3, XUnit2, MSpec, and NSpec3.
AutoFixture - AutoFixture is an open source library for .NET designed to minimize the 'Arrange' phase of your unit tests in order to maximize maintainability. Its primary goal is to allow developers to focus on what is being tested rather than how to setup the test scenario, by making it easier to create object graphs containing test data.
Xtz.StronglyTyped - Set of NuGet packages to strongly-type your interfaces (properties, methods, APIs, DB entities, appsettings). Eliminate stringly-typed interfaces. Make compiler your friend, introduce semantics to your code.
