I started my journey away from Windows with Pop back in May 2020 (last screenshot) and switched to Arch after 6 months to get more familiar with Linux. Faced challenges and learned a lot. Now, as a professional 3D artist, I return to Pop OS for stability—full circle after 3 years!
The GTK (Applications theme) and Shell theme are the Flat Remix theme by Daniruiz. The icon theme is Candy Icons by EliverLara. If you want to set it up exactly like mine, your Tweaks application setting should look like this.

The author of that theme also does "sweet-mars' which is another take on the same general theme. The OP earlier mentioned that is what is being used (and one I've fallen in love with as well.) EliverLara also does the "candy-icons" set: https://github.com/EliverLara/candy-icons

[Question] Why is candy icons only loading for some apps?
I extracted candy icons to the usr share icons but it isn’t working for apps like Firefox, blender, gimp, etc.

Possible to install KDE Candy Icons?
Is it possible to install KDE Candy Icons (https://github.com/EliverLara/candy-icons) on MacOS or easily customize the file icons? I really like the look and feel of KDE, and these icons are my favorite for the KDE desktop. It'd be nice if similar desktop customization existed for MacOS. So far I've failed to find any helpful documentation or discussions.

In my case, I'm using the Blur My Shell extension, so it basically takes whatever background image I have and places it in the overview with a blur effect (though you can also remove the blur completely and just use the extension to set your background as your overview background). By default it will blur a lot of things around your desktop, like the top bar, for instance— just disable anything you don't want; I personally only leave the Overview blur active.
